It’s better than the Shingle Inn Cafe on our hiking days!

Those were the words of our bushwalkers on our Coomera Circuit hike in August 2015. We promised morning tea, however as they came around the bend to the picturesque creek crossing, the hikers were presented with home made Carrot Cake, home made Monte Carlo biscuits and hot cups of tea and coffee. By popular demand we have included the recipe below, reprinted from Stephanie Alexander’s The Cooks Companion. The Coomera Circuit hike from Binna Burra was a 20km day, filled with numerous creek crossings, about 17 waterfalls, amazing scenery and icy cold streams!  We were kept cool by the rainforest canopy, catching glimpses of the blue skies above when we reached certain elevations.  The birds were chirping as were our spirits as we enjoyed a great day out. It is amazing what adventure you find not far from your own backyard – you just have to get out there and seek it out, or go with a group like Women’s Fitness Adventures. Ingredients
  • 125g self raising flour
  • 1/2 teaspoon cinnamon
  • 2/3 cup olive oil
  • 3/4 cup brown sugar
  • 1/2 teaspoon freshly grated nutmeg
  • 2 eggs, lightly beaten
  • 2 cups finely grated carrot
  • 1/2 cup roughly chopped walnuts
Preheat oven to 180 degrees Celcius. Mix together flour, sugar and spices. Add oil and eggs and beat in a food processor or electric mixer for 1 minute. Stir in carrot and walnuts. Pour inot an 18cm springform tin and bake for about an hour. Cool in tin before turning out. Creamy topping In a food processor, blend 125g cream cheese, 250g pure icing sugar and 60g softened butter. Add a few drops of pure vanilla, then spread over top of cake. Sprinkle with walnuts.
